Head Chef – Ollie Wyatt

Born and raised in Falmouth, I am extremely proud to call myself a Cornishman.

I began my career as a kitchen porter at a local Falmouth hotel and gradually progressed through the kitchen ranks at venues such as The Pandora Inn, Gylly Beach café, Nansloe Manor and Headland Hotel before finally becoming the head chef at The Norway Inn.

I personally source a large range of local produce such as line caught Pollock and Mackerel from Mylor, and fresh seasonal vegetables delivered daily by Rob at Zucca.

Our regular fish is freshly sourced by Stevensons of Newlyn, fruit and vegetables are grown by Westcountry via their farm at Canara – and our beef and game from Dexters.

In terms of chefs who have inspired me, I’d have to include Marco Pierre White, Mark Hix, Gary Rhodes, William Curly and Pierre Koffman.

My own choice of food to cook and eat at home with my family is fish – and I am very partial to a simple pan roasted gurnard fillet served with runner beans, Cornish new potatoes & lemon butter with a clotted cream rice pudding with strawberries to finish!

I like to spend time mentoring my own team across all disciplines of the kitchen and as the team develops and grows, I will be able to return to my first love – Pastry!

However, I’m looking forward to achieving a few more things as head chef before I look to retire from the stove yet!!!


The Norway Inn has a reputation for serving great locally-sourced food and is renowned for its award-winning carvery. Head Chef Ollie Wyatt is in charge in the kitchen, ensuring that fresh, local seasonal ingredients sourcing as much meat, fish and vegetables are used from the local areas as much as possible.

As you would expect in, we serve a wide range of fresh fish, and the ‘Specials board’ changes regularly ensuring plenty of variety for all our new and regular customers.

We serve food throughout the day and our menu includes traditional pub food as well as more contemporary dishes. If you prefer to eat in a more traditional setting, you are welcome to dine in our restaurant, presided over by Rodney Gill. Rodney is well-known throughout the area, has been at the Norway Inn for many years and is an extremely popular and important member of our team.

Cornish carvery

Served Sunday all day from 12 noon subject to availability and booking highly recommended.

Our award-winning Cornish carvery serves a selection of Cornish meats carved by our chefs at your request, accompanied by a selection of seasonal vegetables and a choice of potatoes.
